Berry Chantilly Cake

Description

A delightful dessert combining fluffy layers of cake with rich cream and fresh berries, perfect for celebrations.


Ingredients

  • 8 eggs
  • 1 1/2 cups sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 2 tsp corn starch
  • 2 (8 oz) packages cream cheese, softened
  • 1 (8 oz) package mascarpone cheese
  • 3 cups powdered sugar
  • 3/4 tsp almond extract
  • 1 1/4 tsp vanilla extract
  • 2 cups heavy cream
  • 2 cups water
  • 3/4 cup sugar
  • 1 1/2 cups chopped strawberries
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries

Instructions

  1. Line two 10-inch round cake pans with parchment paper and spray with nonstick spray. Set aside.
  2. In a stand mixer, beat 8 eggs until foamy. Gradually add 1 1/2 cups sugar while continuing to beat until fluffy. Stir in 1 tsp vanilla extract.
  3. Sift together 1 1/2 cups flour, 2 tsp baking powder, and 2 tsp corn starch. Gently fold into the egg mixture.
  4. Divide batter between the two pans and bake at 350°F (175°C) for 20 minutes. Let cakes cool completely.
  5. Slice each cake in half to create four layers.
  6. In a stand mixer, combine softened cream cheese, mascarpone cheese, 3 cups powdered sugar, 3/4 tsp almond extract, and 1 1/4 tsp vanilla extract. Mix until smooth.
  7. In a separate bowl, beat 2 cups heavy cream until stiff peaks form.
  8. Gently fold the whipped cream into the cream cheese mixture. Refrigerate for at least 1 hour.
  9. In a saucepan, whisk together 2 cups water and 3/4 cup sugar. Bring to a boil, then simmer until thickened. Let cool.
  10. Brush syrup on one side of each cake layer.
  11. Spread Chantilly cream on the first layer, add a mixture of berries, and repeat until all layers are assembled.
  12. Cover the top and sides of the cake with remaining Chantilly cream.
  13. Top with extra fresh berries to decorate.

Notes

For best results, let the cakes cool overnight and use fresh, ripe berries. Add a layer of lemon curd for a twist.
