Description

A delightful dessert that combines the rich texture of red velvet cake with fresh mixed berries, perfect for any special occasion.


Ingredients

  • 1 1/2 cups granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cocoa powder
  • 1/2 tsp salt
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tbsp red food coloring (or beet juice for a natural version)
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 1 cup mixed fresh berries (blueberries, raspberries, strawberries)
  • 1/2 cup powdered sugar
  • 1 tbsp lemon juice
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • Fresh berries (for garnish)
  • Edible flowers (optional, for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cocoa powder, and salt.
  3. In another bowl, beat together oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar until smooth.
  4. Gradually mix in the dry ingredients.
  5. Divide the batter into the pans and bake for 25-30 minutes.
  6. Cool in the pans for 10 minutes, then on wire racks.
  7. For the berry filling, heat berries, powdered sugar, lemon juice, and vanilla in a saucepan for 5-7 minutes until soft. Let it cool.
  8. For frosting, mix cream cheese and butter until smooth, then add powdered sugar and beat until fluffy; add vanilla and salt.
  9. Slice cooled cakes in half to create layers. Layer berry filling and frosting between each layer, finishing with frosting on top.
  10. Garnish with fresh berries and edible flowers. Chill for 30 minutes before serving.

Notes

Serve chilled for the best flavor and enjoy with coffee or tea. Store leftovers in an airtight container for up to 5 days.
