A delicious and colorful one-pan meal featuring tender beef strips and vibrant vegetables, perfect for busy weeknights.
Ingredients

- 1/2 lb beef strips (flank or sirloin)
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp cornstarch
- 3 tbsp oil (divided)
- 1/2 onion, sliced
- 1/2 red bell pepper, sliced
- 1/2 yellow bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1 tsp minced garlic
- 1/4 cup water or broth
- 1 cup basmati rice, cooked and cooled
- 1/2 cup mixed veggies (carrots, peas, green beans)
- Salt & pepper to taste
- Chopped green onion for garnish (optional)
Instructions
- Marinate the beef strips in soy sauce, oyster sauce, and cornstarch for about 15 minutes.
- In a hot pan, add 1 tablespoon of oil and sear the beef strips until they are browned.
- Once browned, add the minced garlic and sliced onions. Stir-fry for a minute, then add the sliced bell peppers. Cook until they are just tender.
- Pour in the water or broth and let it simmer for a few minutes.
- In a separate pan, heat 2 tablespoons of oil over medium heat. Sauté the mixed veggies until soft.
- Add the cooked rice to the pan with the veggies. Season with salt and pepper, and stir-fry until heated through.
- To serve, place the fried rice on one side of the plate and the saucy beef stir-fry on the other. Garnish with chopped scallions or sesame seeds if desired.
Notes
Store leftovers in an airtight container for up to 4 days. Reheat with a splash of water or broth to retain moisture.
