Ingredients

- 1 lb ground chicken
- 1/2 cup breadcrumbs (panko or regular)
- 1 egg
- 2 garlic cloves, minced
- 2 tbsp fresh basil, finely chopped
- 1 cup couscous
- 1 cup vegetable or chicken broth
- 1 cup mixed summer vegetables (e.g., zucchini, bell pepper, cherry tomatoes)
- Olive oil
- Salt and pepper to taste
Instructions
- In a bowl, combine ground chicken, breadcrumbs, egg, minced garlic, fresh basil, salt, and pepper. Mix well and form into meatballs.
- Preheat oven to 400°F (200°C) and bake meatballs for about 20 minutes until cooked through.
- In a pot, bring vegetable or chicken broth to a boil, add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a skillet, heat olive oil over medium heat and sauté summer vegetables until tender.
- Combine couscous with sautéed vegetables, season with salt and pepper. Serve with basil chicken meatballs on top.
Notes
You can prepare the meatballs a day in advance and keep them refrigerated. Feel free to mix in cheese or use ground turkey instead of chicken.
