Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs (panko or regular)
  • 1 egg
  • 2 garlic cloves, minced
  • 2 tbsp fresh basil, finely chopped
  • 1 cup couscous
  • 1 cup vegetable or chicken broth
  • 1 cup mixed summer vegetables (e.g., zucchini, bell pepper, cherry tomatoes)
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine ground chicken, breadcrumbs, egg, minced garlic, fresh basil, salt, and pepper. Mix well and form into meatballs.
  2. Preheat oven to 400°F (200°C) and bake meatballs for about 20 minutes until cooked through.
  3. In a pot, bring vegetable or chicken broth to a boil, add couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  4. In a skillet, heat olive oil over medium heat and sauté summer vegetables until tender.
  5. Combine couscous with sautéed vegetables, season with salt and pepper. Serve with basil chicken meatballs on top.

Notes

You can prepare the meatballs a day in advance and keep them refrigerated. Feel free to mix in cheese or use ground turkey instead of chicken.
