Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream the softened butter and sugar until light and fluffy. Beat in the eggs one at a time. Add the vanilla extract and strawberry puree, mixing well.
- Mix in the sour cream and milk until smooth. Gradually add the dry ingredients and mix until just combined.
- Divide the cake batter between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- For the icing, beat the softened cream cheese and butter together until creamy. Gradually add the powdered sugar and strawberry puree, mixing until smooth.
- To layer the cake, place one cake layer on a platter. Spread some icing on top, then place the second layer on top. Frost the sides and top of the cake with the remaining icing.
- Refrigerate the cake for 30 minutes to set the icing before serving.
Notes
Make sure your butter and cream cheese are at room temperature for easy blending. For a richer pink color, use a few drops of pink food coloring.
