  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup strawberry puree (fresh or canned)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy. Beat in the eggs one at a time. Add the vanilla extract and strawberry puree, mixing well.
  4. Mix in the sour cream and milk until smooth. Gradually add the dry ingredients and mix until just combined.
  5. Divide the cake batter between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. For the icing, beat the softened cream cheese and butter together until creamy. Gradually add the powdered sugar and strawberry puree, mixing until smooth.
  7. To layer the cake, place one cake layer on a platter. Spread some icing on top, then place the second layer on top. Frost the sides and top of the cake with the remaining icing.
  8. Refrigerate the cake for 30 minutes to set the icing before serving.

Notes

Make sure your butter and cream cheese are at room temperature for easy blending. For a richer pink color, use a few drops of pink food coloring.
