Description

A delightful dish that combines tender salmon with a refreshing avocado cucumber salsa. Perfect for a healthy dinner that is quick and easy to prepare.


Ingredients

  • 4 salmon fillets (about 5 oz each)
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt & pepper, to taste
  • 1 avocado, diced
  • 1 cucumber, diced
  • 1 lime, juiced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the olive oil, paprika, garlic powder, salt, and pepper.
  3. Brush the salmon fillets with the mixture.
  4. Place the fillets on a baking sheet and bake for 15-20 minutes or until cooked through.
  5. While the salmon is baking, prepare the avocado cucumber salsa by combining the diced avocado, cucumber, lime juice, red onion, and cilantro in a bowl. Mix gently.
  6. Serve the salmon topped with the avocado cucumber salsa.

Notes

For best results, do not overcook the salmon. To prevent avocado from browning, squeeze extra lime juice over it before serving.
