  • 1/2 cup salted butter, melted
  • 5 tbsp light brown sugar
  • 1 tsp ground cinnamon
  • 24 oz cream cheese, room temperature
  • 1 cup brown sugar
  • 3 tbsp all-purpose flour
  • 1 cup mashed ripe bananas (23 bananas)
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp dark rum
  • 3 large eggs
  • 1/4 cup salted butter
  • 1/2 cup light brown sugar
  • 1/8 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1 tbsp heavy whipping cream
  • 2 tbsp dark rum
  • 2 medium bananas, sliced
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat the oven to 325°F (163°C) and line a 9-inch springform pan with parchment paper. Grease the sides.
  2. Prepare the crust: Mix vanilla wafer crumbs, melted butter, brown sugar, and cinnamon. Press the mixture into the pan and bake for 10 minutes. Let it cool.
  3. Wrap the pan: Cover the outside with foil to prevent water from leaking in during the water bath.
  4. Lower oven temperature to 300°F (148°C).
  5. Make the filling: Beat cream cheese, brown sugar, and flour on low speed until smooth. Add mashed bananas, cinnamon, nutmeg, and rum. Mix in eggs one at a time.
  6. Pour the batter into the cooled crust.
  7. Water bath: Place the pan in a larger pan and fill it with warm water. Bake for 1 hour.
  8. Cool in the oven: Turn off the oven and leave the cheesecake inside for 30 minutes. Then crack the oven door and cool for another 30 minutes.
  9. Remove from the oven and refrigerate for 6-7 hours.
  10. Make the Bananas Foster: Melt butter in a pan, add brown sugar, cinnamon, nutmeg, and cream. Stir and add rum. Flambé carefully! Add sliced bananas and cook for 1-2 minutes.
  11. Whip the cream: Mix heavy whipping cream, powdered sugar, and cinnamon until stiff peaks form.
  12. Assemble: Pipe whipped cream around the cheesecake, spoon the Bananas Foster over the top, and drizzle with the sauce.

Ensure cream cheese is at room temperature for a smoother filling. The water bath helps cook the cheesecake evenly.
