Description

Delightful soft and moist muffins filled with ripe bananas and crunchy walnuts, perfect for breakfast or snacks.


Ingredients

  • 2 ripe bananas
  • 1 cup flour
  • 1/4 cup sugar
  • 1 egg
  • 1/4 cup oil
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon baking soda

Instructions

  1. Mash the ripe bananas in a bowl.
  2. Mix in the oil and egg until well combined.
  3. In another bowl, combine the flour, sugar, and baking soda.
  4. Fold the dry mix into the banana mixture, then add chopped walnuts.
  5. Pour the batter into a muffin tin lined with paper cups.
  6. Bake at 180°C (350°F) for 18–20 minutes until golden brown and a toothpick comes out clean.

Notes

Use very ripe bananas for the best flavor. Don’t overmix the batter; a few lumps are okay.
