Ingredients

- 2 ripe bananas
- 1 cup flour
- 1/4 cup sugar
- 1 egg
- 1/4 cup oil
- 1/2 cup chopped walnuts
- 1/2 teaspoon baking soda
Instructions
- Mash the ripe bananas in a bowl.
- Mix in the oil and egg until well combined.
- In another bowl, combine the flour, sugar, and baking soda.
- Fold the dry mix into the banana mixture, then add chopped walnuts.
- Pour the batter into a muffin tin lined with paper cups.
- Bake at 180°C (350°F) for 18–20 minutes until golden brown and a toothpick comes out clean.
Notes
Use very ripe bananas for the best flavor. Don’t overmix the batter; a few lumps are okay.
