Ingredients

  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon (optional)
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 ripe bananas, mashed
  • 1/2 cup buttermilk (or 1/2 cup milk + 1 tsp vinegar)
  • 3/4 cup chopped walnuts
  • 2 cups milk
  • 1/4 cup granulated sugar (for custard)
  • 2 tbsp cornstarch
  • 2 egg yolks
  • 1 tbsp butter

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch cake pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, cream the softened butter, granulated sugar, and brown sugar until fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Mix in the mashed bananas and buttermilk until well combined.
  6. Gradually fold in the dry ingredients, then stir in the chopped walnuts.
  7. Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick comes out clean. Let the cake cool completely.
  8. For the vanilla custard, heat the milk in a saucepan over medium heat until warm.
  9. In a bowl, whisk together the sugar, cornstarch, and egg yolks until smooth.
  10. Slowly pour the warm milk into the egg mixture while whisking constantly.
  11. Return the mixture to the saucepan and cook over low heat, stirring until thickened. Remove from heat and stir in the vanilla extract and butter. Let cool.
  12. To serve, pour the warm custard over a slice of banana walnut cake. Garnish with extra walnuts or a drizzle of honey. Serve warm or chilled.

Notes

Add a caramel drizzle for extra indulgence. Ensure bananas are very ripe for best flavor.
