  • 2 ripe bananas (mashed)
  • 1/2 cup fresh strawberry puree (strained)
  • 1/2 cup heavy cream
  • 1 cup fresh strawberries (sliced)
  • 1/4 cup strawberry jam or puree
  • 1 tbsp lemon juice
  • 2 ripe bananas (sliced)
  • 1 tbsp honey or maple syrup

Instructions

  1. Preheat your oven to 325°F (165°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then set aside to cool.
  2. In a separate large bowl, beat the softened cream cheese and sour cream until smooth. Add in the sugar and beat until well mixed. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract, mashed bananas, strawberry puree, and heavy cream until everything is smooth and creamy.
  3. Pour the cheesecake filling onto the cooled crust and smooth the top. Bake for 45-50 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool at room temperature for about 1 hour. Transfer it to the fridge to chill for at least 4 hours or overnight.
  4. While the cheesecake is chilling, heat the strawberry jam or puree with lemon juice in a small saucepan over low heat until it becomes syrupy. Let it cool slightly.
  5. Slice your bananas and drizzle them with honey or maple syrup for added sweetness.
  6. Once the cheesecake is chilled, top it with the strawberry syrup, fresh sliced strawberries, and banana slices.
