- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (melted)
- 24 oz cream cheese (softened)
- 1 cup sour cream
- 3/4 cup granulated sugar

- 1 tsp vanilla extract
- 2 ripe bananas (mashed)
- 1/2 cup fresh strawberry puree (strained)
- 1/2 cup heavy cream
- 1 cup fresh strawberries (sliced)
- 1/4 cup strawberry jam or puree
- 1 tbsp lemon juice
- 2 ripe bananas (sliced)
- 1 tbsp honey or maple syrup
Instructions
- Preheat your oven to 325°F (165°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then set aside to cool.
- In a separate large bowl, beat the softened cream cheese and sour cream until smooth. Add in the sugar and beat until well mixed. Add the eggs one at a time, mixing well after each. Stir in the vanilla extract, mashed bananas, strawberry puree, and heavy cream until everything is smooth and creamy.
- Pour the cheesecake filling onto the cooled crust and smooth the top. Bake for 45-50 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool at room temperature for about 1 hour. Transfer it to the fridge to chill for at least 4 hours or overnight.
- While the cheesecake is chilling, heat the strawberry jam or puree with lemon juice in a small saucepan over low heat until it becomes syrupy. Let it cool slightly.
- Slice your bananas and drizzle them with honey or maple syrup for added sweetness.
- Once the cheesecake is chilled, top it with the strawberry syrup, fresh sliced strawberries, and banana slices.
