Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 ripe bananas, mashed
  • 3 tablespoons lemon juice
  • 4 (8 oz) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chopped strawberries

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan thoroughly.
  2. Mix graham cracker crumbs with melted butter, and press into the bottom of the pan to form the crust.
  3. In a separate bowl, combine mashed bananas with lemon juice.
  4. Beat cream cheese with sugar until smooth, then add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream, vanilla extract, and flour until the mixture is smooth. Fold in the banana mixture and chopped strawberries.
  6. Pour the filling into the crust and bake for 60-70 minutes, until the center is slightly jiggly.
  7. Turn off the oven and let the cheesecake sit inside for 1 hour.
  8. Cool completely on a wire rack and refrigerate for at least 4 hours before serving. Slice and serve chilled.

Notes

For a stronger banana flavor, add an extra banana to the filling. Use fresh strawberries for the best results.
