- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 ripe bananas, mashed
- 3 tablespoons lemon juice
- 4 (8 oz) packages cream cheese, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1 1/2 cups chopped strawberries
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan thoroughly.
- Mix graham cracker crumbs with melted butter, and press into the bottom of the pan to form the crust.
- In a separate bowl, combine mashed bananas with lemon juice.
- Beat cream cheese with sugar until smooth, then add eggs one at a time, mixing well after each addition.
- Stir in sour cream, vanilla extract, and flour until the mixture is smooth. Fold in the banana mixture and chopped strawberries.
- Pour the filling into the crust and bake for 60-70 minutes, until the center is slightly jiggly.
- Turn off the oven and let the cheesecake sit inside for 1 hour.
- Cool completely on a wire rack and refrigerate for at least 4 hours before serving. Slice and serve chilled.
Notes
For a stronger banana flavor, add an extra banana to the filling. Use fresh strawberries for the best results.
