Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 ripe bananas, mashed
  • 3 tablespoons lemon juice
  • 4 (8 oz) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chopped strawberries

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs with melted butter, and press the mixture into the bottom of the pan to form a crust.
  3. Mash the bananas and mix them with lemon juice in a bowl.
  4. In a separate bowl, beat cream cheese and sugar together until smooth. Add eggs one at a time, then mix in sour cream, vanilla extract, and flour. Gently fold in the banana mixture and remaining chopped strawberries.
  5. Pour the cheesecake filling into the prepared crust and bake for 60-70 minutes, or until the center is slightly jiggly.
  6. Turn off the oven, and let the cheesecake cool inside for 1 hour.
  7. After cooling, place the cheesecake on a wire rack, then refrigerate for at least 4 hours.
  8. Once chilled, slice the cheesecake and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. Can freeze slices wrapped for up to 2 months.
