- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 ripe bananas, mashed
- 3 tablespoons lemon juice
- 4 (8 oz) packages cream cheese, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1 1/2 cups chopped strawberries
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- Mix graham cracker crumbs with melted butter, and press the mixture into the bottom of the pan to form a crust.
- Mash the bananas and mix them with lemon juice in a bowl.
- In a separate bowl, beat cream cheese and sugar together until smooth.
- Add eggs one at a time, then mix in sour cream, vanilla extract, and flour.
- Gently fold in the banana mixture and remaining chopped strawberries.
- Pour the cheesecake filling into the prepared crust and bake for 60-70 minutes, or until the center is slightly jiggly.
- Turn off the oven, and let the cheesecake cool inside for 1 hour.
- After cooling, place the cheesecake on a wire rack, then refrigerate for at least 4 hours.
- Once chilled, slice the cheesecake and serve.
