- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 ripe bananas, mashed
- 3 tablespoons lemon juice
- 4 (8 oz) packages cream cheese, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1 1/2 cups chopped strawberries
Instructions
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan thoroughly.
- In a medium bowl, blend the graham cracker crumbs with melted butter until combined, then press into the bottom of the pan.
- In a separate bowl, mix mashed bananas with lemon juice; set aside.
- In a large bowl, beat cream cheese with sugar until smooth. Add eggs one at a time, followed by sour cream, vanilla, and flour. Fold in banana mixture and strawberries.
- Pour filling into the crust and bake for 60-70 minutes until nearly set.
- Turn off the oven and let the cheesecake cool inside for an hour.
- Cool completely on a wire rack, then refrigerate for at least 4 hours. Serve chilled.
Notes
For best flavor, use ripe bananas. Store leftovers in the refrigerator for 3-4 days or freeze for longer storage.
