- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 large ripe bananas, mashed
- 1 tablespoon lemon juice
- 1/4 cup granulated sugar
- 2 cups fresh strawberries, sliced
- 1/4 cup granulated sugar
- 1 teaspoon cornstarch
- 2 tablespoons water
Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.
- In a large mixing bowl, beat the cream cheese and 1/2 cup sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, combine the mashed bananas, lemon juice, and 1/4 cup sugar. Mix until smooth.
- Pour the banana mixture over the crust, then gently pour the cheesecake batter over the banana layer. Bake for 40-45 minutes, until the edges are set and the center is slightly jiggly. Let it cool to room temperature.
- In a saucepan, combine sliced strawberries and 1/4 cup sugar over medium heat. Cook until the strawberries release their juices. Add dissolved cornstarch mixed with 2 tablespoons water and cook until thickened. Let cool.
- Once cooled, spread the strawberry topping over the cheesecake. Refrigerate for at least 4 hours or overnight.
- Garnish with banana slices and strawberries if desired. Slice and enjoy!
Notes
Use ripe bananas for the best flavor and sweetness. Store leftovers in an airtight container for 3-4 days.
