Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 large ripe bananas, mashed
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 2 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until combined. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.
  2. In a large mixing bowl, beat the cream cheese and 1/2 cup sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In another bowl, combine the mashed bananas, lemon juice, and 1/4 cup sugar. Mix until smooth.
  4. Pour the banana mixture over the crust, then gently pour the cheesecake batter over the banana layer. Bake for 40-45 minutes, until the edges are set and the center is slightly jiggly. Let it cool to room temperature.
  5. In a saucepan, combine sliced strawberries and 1/4 cup sugar over medium heat. Cook until the strawberries release their juices. Add dissolved cornstarch mixed with 2 tablespoons water and cook until thickened. Let cool.
  6. Once cooled, spread the strawberry topping over the cheesecake. Refrigerate for at least 4 hours or overnight.
  7. Garnish with banana slices and strawberries if desired. Slice and enjoy!

Notes

Use ripe bananas for the best flavor and sweetness. Store leftovers in an airtight container for 3-4 days.
