- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 large ripe bananas, mashed
- 1 tablespoon lemon juice
- 1/4 cup granulated sugar
- 2 cups fresh strawberries, sliced
- 1/4 cup granulated sugar
- 1 teaspoon cornstarch dissolved in 2 tablespoons water
Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes, then set aside to cool.
- In a large mixing bowl, beat the cream cheese and 1/2 cup sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, mix the mashed bananas, lemon juice, and 1/4 cup sugar until smooth.
- Pour the banana mixture evenly over the baked crust. Gently pour the cheesecake batter over the banana layer, spreading it evenly with a spatula.
- Bake for 40–45 minutes, or until the edges are set, and the center is slightly jiggly. Remove from the oven and let it cool to room temperature.
- In a saucepan over medium heat, combine the strawberries and 1/4 cup sugar. Cook until the strawberries release their juices, about 5 minutes. Add the dissolved cornstarch and keep cooking for another 2–3 minutes until the mixture thickens. Let it cool completely.
- Once the cheesecake has cooled, spread the strawberry topping evenly over the top. Refrigerate for at least 4 hours or overnight for best results.
