Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 large ripe bananas, mashed
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 2 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon cornstarch dissolved in 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake the crust for 10 minutes, then set aside to cool.
  2. In a large mixing bowl, beat the cream cheese and 1/2 cup sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, mix the mashed bananas, lemon juice, and 1/4 cup sugar until smooth.
  4. Pour the banana mixture evenly over the baked crust. Gently pour the cheesecake batter over the banana layer, spreading it evenly with a spatula.
  5. Bake for 40–45 minutes, or until the edges are set, and the center is slightly jiggly. Remove from the oven and let it cool to room temperature.
  6. In a saucepan over medium heat, combine the strawberries and 1/4 cup sugar. Cook until the strawberries release their juices, about 5 minutes. Add the dissolved cornstarch and keep cooking for another 2–3 minutes until the mixture thickens. Let it cool completely.
  7. Once the cheesecake has cooled, spread the strawberry topping evenly over the top. Refrigerate for at least 4 hours or overnight for best results.
