- 2 cups crushed vanilla wafers (about 50 cookies)
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup marshmallow fluff
- 3.4 ounces banana cream pudding mix (1 package)
- 1 cup mashed ripe banana (about 2 bananas)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the crushed vanilla wafers and melted butter. Press the mixture into the bottom of a parchment paper-lined 9×9-inch baking pan and bake for 10 minutes.
- In a large mixing bowl, cream together the softened cream cheese and sugar until smooth. Add the eggs and vanilla extract, mixing until well incorporated. Mix in the marshmallow fluff, banana cream pudding mix, and mashed bananas until combined.
- Pour the cheesecake mixture over the baked crust and bake for 20 minutes. Then reduce the temperature to 200°F (93°C) and bake for another 30 minutes without opening the oven door.
- Turn off the oven and let the cheesecake bars sit for 10 minutes.
- Allow to cool completely at room temperature, then refrigerate for at least 3 hours to set.
- Serve cut into squares, topped with whipped cream and a banana slice.
Notes
Use ripe bananas for the best flavor and sweetness. Ensure cream cheese is softened for smoother mixing.
