- 2 ripe bananas, mashed
- 1 cup diced fresh or canned peaches (drained if using canned)
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground cinnamon (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla and mashed bananas.
- In another bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- Gradually mix the dry ingredients into the banana mixture until just combined.
- Gently fold in the diced peaches. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For extra flavor, consider adding chopped nuts or chocolate chips. Store in an airtight container at room temperature for up to 3 days.
