Description

Ingredients

  • 2 eggs
  • 1/4 cup brown sugar
  • 1 1/4 cups low-fat buttermilk
  • 1/4 cup vegetable or canola oil
  • 1 3/4 cups all-purpose flour + 2 tbsp (if needed)
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/8 tsp salt
  • 1 tsp cinnamon
  • 1 cup chopped walnuts (optional)

Instructions

  1. Mash the bananas in a bowl until smooth.
  2. Add eggs, brown sugar, oil, and buttermilk, whisking until combined.
  3. Stir in flour, baking powder, baking soda, cinnamon, and salt. Fold in walnuts if using.
  4. Let the batter sit for 15 minutes.
  5. Heat a pan on medium heat, greasing lightly. Pour in batter and cook until bubbles form. Flip and cook until golden brown.
  6. Serve with maple syrup or fresh fruits.

Notes

Ensure bananas are ripe for the best sweetness. Don’t overmix for fluffy pancakes.
