- 2 medium bananas
- 2 eggs
- 1/4 cup brown sugar
- 1 1/4 cups low-fat buttermilk
- 1/4 cup vegetable or canola oil
- 1 3/4 cups all-purpose flour + 2 tbsp (if needed)
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/8 tsp salt
- 1 tsp cinnamon
- 1 cup chopped walnuts (optional)
Instructions
- Mash the bananas in a bowl until smooth.
- Add eggs, brown sugar, oil, and buttermilk, whisking until combined.
- Stir in flour, baking powder, baking soda, cinnamon, and salt. Fold in walnuts if using.
- Let the batter sit for 15 minutes.
- Heat a pan on medium heat, greasing lightly. Pour in batter and cook until bubbles form. Flip and cook until golden brown.
- Serve with maple syrup or fresh fruits.

Ensure bananas are ripe for the best sweetness. Don’t overmix for fluffy pancakes.
