Delicious muffins combining ripe bananas with a creamy cream cheese filling, perfect for breakfast or snacks.


Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups mashed bananas
  • 1/2 cup granulated sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 5 tablespoons granulated sugar
  • 2 teaspoons whole milk
  • 2 teaspoons all-purpose flour
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line 12 muffin cups with liners. Set aside.
  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, and salt. Set aside.
  3. In a medium bowl, whisk together the mashed bananas, sugar, egg, and vanilla. Pour the wet ingredients into the dry ingredients and stir until just combined. Set aside.
  4. In a large bowl with an electric mixer, whip the softened cream cheese until smooth. Add the sugar, milk, flour, and vanilla, mixing until well combined.
  5. Fill each muffin liner halfway with the banana batter. Distribute the cream cheese filling between each muffin and smooth out the top.
  6. Spoon the remaining banana batter on top of each muffin, smoothing out the top. Use a toothpick to swirl the tops, creating a lovely swirl.
  7. Bake muffins for 22-24 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then remove them and cool completely on a wire rack.

Notes

Use overripe bananas for better flavor and sweetness. Store in an airtight container for up to 3 days, or refrigerate for up to 1 week.
