  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 ripe bananas, mashed
  • 1 cup heavy cream
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon vanilla extract
  • Sliced bananas for garnish

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Mix the graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press this mixture into a 9-inch springform pan.
  3. Bake for 10 minutes, then let it cool.
  4. In another bowl, beat the cream cheese until smooth. Add the 1/2 cup sugar and mix until combined. Then, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Add the sour cream and mashed bananas to the cream cheese mixture and blend well.
  6. Pour the cheesecake batter into the cooled crust.
  7. Bake for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
  8. Let the cheesecake cool completely on a wire rack.
  9. In a separate bowl, whip the heavy cream, 2 tablespoons sugar, and 1/4 teaspoon vanilla extract until stiff peaks form.
  10. Top the cooled cheesecake with the whipped cream and sliced bananas.
  11. Refrigerate for at least 4 hours or overnight before serving.

Notes

Use ripe bananas for better flavor. Make sure your cream cheese is softened for easy mixing.
