  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 ripe bananas, mashed
  • 1 cup heavy cream
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon vanilla extract
  • Sliced bananas for garnish

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press this mixture into a 9-inch springform pan.
  3. Bake the crust for 10 minutes and then let it cool.
  4. In a mixing bowl, beat cream cheese until smooth. Add 1/2 cup sugar and beat until combined. Then, add the egg yolks one at a time, followed by the vanilla extract.
  5. Mix in the sour cream and mashed bananas until everything is well combined.
  6. Pour the cheesecake batter into the cooled crust evenly.
  7. Bake for 55-60 minutes until the edges are set and the center is slightly jiggly.
  8. Let the cheesecake cool completely on a wire rack.
  9. For the topping, whip heavy cream, 2 tablespoons sugar, and 1/4 teaspoon vanilla extract until stiff peaks form.
  10. Once the cheesecake is cooled, gently top it with the whipped cream and sliced bananas.
  11. Refrigerate for at least 4 hours or overnight before serving.

Notes

Use very ripe bananas for a sweeter flavor and make sure cream cheese is at room temperature for easier mixing.
