- 1 cup sour cream
- 2 ripe bananas, mashed

Instructions
- Preheat your oven to 350°F (180°C).
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Press this mixture into a 9-inch springform pan.
- Bake the crust for 10 minutes and then let it cool.
- In a mixing bowl, beat cream cheese until smooth. Add 1/2 cup sugar and beat until combined. Then, add the egg yolks one at a time, followed by the vanilla extract.
- Mix in the sour cream and mashed bananas until everything is well combined.
- Pour the cheesecake batter into the cooled crust evenly.
- Bake for 55-60 minutes until the edges are set and the center is slightly jiggly.
- Let the cheesecake cool completely on a wire rack.
- For the topping, whip heavy cream, 2 tablespoons sugar, and 1/4 teaspoon vanilla extract until stiff peaks form.
- Once the cheesecake is cooled, gently top it with the whipped cream and sliced bananas.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
Use very ripe bananas for a sweeter flavor and make sure cream cheese is at room temperature for easier mixing.
