Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup smooth peanut butter
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • ½ cup heavy cream
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter, cubed
  • ½ cup heavy cream (for caramel)
  • 2 bananas, sliced
  • ¼ cup chopped peanuts
  • Caramel sauce

Instructions

  1. Preheat your oven to 325°F (160°C). Mix the graham cracker crumbs and melted butter in a medium bowl. Press this mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Let it cool.
  2. In a large bowl, beat the cream cheese and sugar until smooth. Add the peanut butter and vanilla extract, mixing well. Add the eggs one at a time, beating after each addition. Stir in the heavy cream. Pour this filling over the cooled crust and bake for 50-60 minutes or until the center is set. Let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  3. In a medium saucepan, melt the sugar over medium heat, stirring constantly until it turns golden brown. Add the cubed butter and mix until melted. Slowly stir in the heavy cream until smooth. Remove from heat and let it cool slightly. Pour the caramel over the chilled cheesecake and spread it evenly. Refrigerate for 30 minutes.
  4. Arrange the banana slices on top of the cheesecake. Sprinkle with chopped peanuts and drizzle with caramel sauce before serving.

Notes

For the best texture, allow the cheesecake to chill completely. You can also substitute bananas with other fruits for different flavors.
