- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Gradually add the dry flour mixture and buttermilk to the wet mixture, starting and ending with the flour mixture.
- Gently fold in the mashed bananas.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake cools, beat together the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, beating until creamy.
- Once the cake is completely cooled, spread the cream cheese frosting evenly over the top.
Notes
Use very ripe bananas for the best flavor. Soften butter and cream cheese for easy mixing. Adjust powdered sugar in frosting to taste.
