  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed bananas (240 ml), about 2-3 large, brown bananas
  • 1 1/4 cups all-purpose flour (156 grams)
  • 3/4 cup cocoa powder (60 grams)
  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate chips (270 grams)

Instructions

  1. Preheat your oven to 350°F (180°C) or 170°C for a fan-forced oven. Line your baking pan with parchment paper or grease it lightly.
  2. In a large bowl, melt the butter and sugar in the microwave. Whisk in the eggs and vanilla extract. Mix in the mashed bananas.
  3. In another bowl, mix the dry ingredients: flour, cocoa powder, and salt. Gradually combine with the wet mixture, leaving some lumps from the bananas.
  4. Stir in the chocolate chips. Pour the batter into the prepared pan and bake for about 35 minutes.
  5. Allow the brownies to cool for 4 hours before slicing them into squares.

Notes

For best results, use overly ripe bananas and avoid overmixing the batter for a fudgy texture. You can also add nuts for added crunch.
