Ingredients

  • Salt & black pepper, to taste
  • 1/2 tsp garlic powder
  • 1/4 cup balsamic vinegar
  • 1 tbsp honey
  • 1 cup strawberries, diced
  • 2 tbsp red onion, finely chopped
  • 1 tbsp fresh basil, thinly sliced
  • 1 tsp balsamic vinegar
  • Pinch of salt
  • Optional: 1/2 tsp honey for extra sweetness

Instructions

  1. Season the chicken with olive oil, salt, pepper, and garlic powder.
  2. In a skillet or grill pan over medium heat, cook the chicken for 6–7 minutes per side until golden and cooked through.
  3. While the chicken cooks, whisk the balsamic vinegar and honey in a small saucepan. Simmer for 5–7 minutes until it thickens.
  4. In a bowl, combine the strawberries, red onion, basil, balsamic vinegar, and salt for the relish. Let it sit for 5 minutes.
  5. Drizzle the chicken with the balsamic glaze and top it with the strawberry relish. Serve warm.

Notes

For best flavor, let the relish sit for a few minutes before serving. Store leftover chicken and relish separately in airtight containers.
