- 1 tbsp olive oil
- Salt & black pepper, to taste
- 1/2 tsp garlic powder
- 1/4 cup balsamic vinegar
- 1 tbsp honey
- 1 cup strawberries, diced
- 2 tbsp red onion, finely chopped
- 1 tbsp fresh basil, thinly sliced
- 1 tsp balsamic vinegar
- Pinch of salt
- Optional: 1/2 tsp honey for extra sweetness
Instructions
- Season the chicken with olive oil, salt, pepper, and garlic powder.
- In a skillet or grill pan over medium heat, cook the chicken for 6–7 minutes per side until golden and cooked through.
- While the chicken cooks, whisk the balsamic vinegar and honey in a small saucepan. Simmer for 5–7 minutes until it thickens.
- In a bowl, combine the strawberries, red onion, basil, balsamic vinegar, and salt for the relish. Let it sit for 5 minutes.
- Drizzle the chicken with the balsamic glaze and top it with the strawberry relish. Serve warm.
Notes
For best flavor, let the relish sit for a few minutes before serving. Store leftover chicken and relish separately in airtight containers.
