- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup honey
- 1/4 cup chopped pistachios
- 1/4 cup chopped walnuts
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1/4 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 cup caramel sauce for drizzling
- Additional chopped pistachios and walnuts for garnish
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter and sugar together until light and fluffy.
- Add the honey and mix until well combined.
- In a separate bowl, whisk together the flour, cinnamon, cardamom, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped pistachios and walnuts.
- Roll the dough into small balls and flatten slightly. Place them on the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Allow the cookies to cool completely.
- Prepare the filling by beating the cream cheese and powdered sugar together until smooth.
- Spread the cream cheese filling onto the flat side of one cookie and top with another cookie to create a sandwich.
- Drizzle caramel sauce over the top and garnish with additional chopped nuts.
