Description

Delicious and healthy baked quesadillas filled with spinach, mushrooms, and cheese – perfect for a meal or snack.


Ingredients

  • 4 tortillas (8 inch)
  • Olive oil (optional, enough to lightly coat the tortillas)
  • 3 cups roughly chopped spinach
  • 8 ounces sliced mushrooms
  • 1 cup shredded cheese (such as mozzarella or cheddar)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan over medium heat, add the sliced mushrooms and sauté until tender.
  3. Add the chopped spinach to the pan and cook until wilted, about 2-3 minutes. Season with salt and pepper.
  4. Lightly coat one side of each tortilla with olive oil.
  5. Place a tortilla on a baking sheet, oiled side down. Sprinkle half of the shredded cheese on one half, followed by the spinach and mushroom mixture, and then the remaining cheese.
  6. Fold the tortilla over to cover the filling.
  7. Repeat with the remaining tortillas.
  8. Bake in the preheated oven for 15-20 minutes, until golden and crispy.
  9. Cut into wedges and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
