Description

Delicious and healthy Baked Spinach Mushroom Quesadillas that are easy to make and packed with flavor.


Ingredients

  • 4 tortillas (8 inch)
  • Olive oil (optional, enough to lightly coat the tortillas)
  • 3 cups roughly chopped spinach
  • 8 ounces sliced mushrooms
  • 1 cup cheese (cheddar, mozzarella, or your choice)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, sauté the mushrooms in olive oil until they are softened.
  3. Add the chopped spinach to the skillet and cook until wilted. Season with salt and pepper.
  4. Place one tortilla on a baking sheet and layer with the spinach and mushroom mixture, followed by cheese.
  5. Top with another tortilla and lightly brush the top with olive oil.
  6. Bake for 10-15 minutes, or until the tortillas are golden and crispy.
  7. Cut into wedges and serve warm.

Notes

Serve warm with a side of salsa, guacamole, or sour cream. Store leftovers in an airtight container in the fridge for up to 3 days.
