Ingredients

- 4 (6 oz) salmon fillets (skin-on or skinless)
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 lemon, sliced (optional for garnish)
- 1 cup fresh cranberries
- 1/4 cup pecans, chopped
- 1/4 cup brown sugar
- 1 tbsp apple cider vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Place salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
- Bake for 15-20 minutes, or until salmon is cooked through.
- In a small saucepan over medium heat, combine cranberries, brown sugar, and apple cider vinegar. Cook until cranberries burst and the mixture thickens slightly, about 10 minutes.
- Stir in chopped pecans and remove from heat.
- Serve salmon topped with cranberry salsa and garnish with lemon slices if desired.
Notes
Check the salmon for doneness, it should flake easily with a fork. Adjust sweetness of salsa as preferred.
