Ingredients

  • 4 (6 oz) salmon fillets (skin-on or skinless)
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 lemon, sliced (optional for garnish)
  • 1 cup fresh cranberries
  • 1/4 cup pecans, chopped
  • 1/4 cup brown sugar
  • 1 tbsp apple cider vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
  3. Bake for 15-20 minutes, or until salmon is cooked through.
  4. In a small saucepan over medium heat, combine cranberries, brown sugar, and apple cider vinegar. Cook until cranberries burst and the mixture thickens slightly, about 10 minutes.
  5. Stir in chopped pecans and remove from heat.
  6. Serve salmon topped with cranberry salsa and garnish with lemon slices if desired.

Notes

Check the salmon for doneness, it should flake easily with a fork. Adjust sweetness of salsa as preferred.
