- 2 cups all-purpose flour
- 1/2 cup powdered sugar

- 150g cold butter, cubed
- 1 egg yolk
- 3 tablespoons cold water
- 4 cups fresh pineapple, chopped
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix flour, powdered sugar, and salt. Add cold butter and mix until crumbly.
- Stir in egg yolk and cold water until a dough forms. Press into a pie pan.
- In another bowl, combine chopped pineapple, granulated sugar, cornstarch, vanilla extract, and lemon juice.
- Pour the pineapple mixture into the crust.
- Bake for 30-35 minutes until golden and bubbly. Let cool before serving.
Notes
Serve warm or at room temperature, optionally with whipped cream or ice cream. Store covered in the refrigerator for 3-4 days or freeze for longer storage.
