Ingredients

  • 1/2 cup powdered sugar
  • 1/2 teaspoon salt
  • 150g cold butter, cubed
  • 1 egg yolk
  • 3 tablespoons cold water
  • 4 cups fresh pineapple, chopped
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix flour, powdered sugar, and salt. Add cold butter and mix until crumbly.
  3. Stir in egg yolk and cold water until a dough forms. Press into a pie pan.
  4. In another bowl, combine chopped pineapple, granulated sugar, cornstarch, vanilla extract, and lemon juice.
  5. Pour the pineapple mixture into the crust.
  6. Bake for 30-35 minutes until golden and bubbly. Let cool before serving.

Notes

Serve warm or at room temperature, optionally with whipped cream or ice cream. Store covered in the refrigerator for 3-4 days or freeze for longer storage.
