Description

Baked Parmesan Tomatoes are a delightful and simple dish that celebrates the fresh flavors of ripe tomatoes, combined with mozzarella and parmesan cheese, topped with a crunchy breadcrumb mixture.


Ingredients

  • 4 large ripe tomatoes, sliced thick
  • 1 cup shredded mozzarella
  • 1/2 cup freshly grated parmesan
  • 1/4 cup seasoned breadcrumbs
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp chopped fresh parsley (plus extra for garnish)
  • 1/2 tsp dried oregano
  • Salt & black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the tomato slices in a greased baking dish. Season them with salt and pepper.
  3. Sprinkle the minced garlic over the tomatoes, then layer the mozzarella and parmesan cheese on top of each slice.
  4. In a small bowl, mix the breadcrumbs, olive oil, oregano, and parsley. Then sprinkle this mixture on top of the tomatoes.
  5. Roast in the oven for 15 to 18 minutes until the cheese is melted and bubbly. For a golden crust, broil for an additional 1 to 2 minutes.
  6. Garnish with extra parsley and serve warm.

Notes

Choose ripe tomatoes for the best flavor. Feel free to experiment with different types of cheese or add herbs and spices according to your taste. This dish can be made ahead of time and baked when ready to serve.
