Description

Delightful baked doughnuts that combine coffee and chocolate for a satisfying treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg
  • 2 tbsp unsalted butter, melted and cooled
  • 1/3 cup milk (buttermilk preferred, or 1%, 2%, or whole)
  • 1 tbsp plain Greek yogurt or sour cream
  • 2 tsp instant coffee powder
  • 1 tsp vanilla extract
  • 6 tbsp packed light brown sugar
  • 1/2 cup chocolate chips (dark or semi-sweet)
  • 2 tbsp unsalted butter (for glaze)
  • 1 tbsp cream (heavy cream, whipping cream, or half-and-half)
  • 1 tbsp corn syrup
  • Chocolate sprinkles for decorating (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a 6-cavity doughnut pan with non-stick spray.
  2. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a medium bowl, whisk together the egg, melted butter, milk, yogurt/sour cream, instant coffee powder, vanilla extract, and packed brown sugar until the coffee powder is completely dissolved.
  4. Fold the wet ingredients into the dry ingredients using a wooden spoon or spatula. Whisk to combine.
  5. Spoon or pipe the batter into the doughnut pan, filling each cavity about 2/3 full.
  6. Bake for 8-10 minutes until the doughnuts feel slightly firm to the touch. Cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
  7. In a double boiler, melt together the chocolate chips, butter, cream, and corn syrup over low heat, stirring occasionally.
  8. Dip the tops of each doughnut in the chocolate glaze and decorate with chocolate sprinkles if desired.

Notes

Store in an airtight container at room temperature for up to 2-3 days. Refrigerate for about a week.
