Description

A delicious and easy dish combining creamy feta cheese with sweet, blistered cherry tomatoes and perfectly cooked pasta.


Ingredients

  • 200g (7 oz) penne or any pasta of your choice
  • 200g (7 oz) block of feta cheese (preferably full-fat)
  • 1 pint (300g) cherry tomatoes, halved
  • 3 tbsp olive oil
  • 23 cloves garlic, minced
  • 1 tsp dried oregano

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In an oven-safe dish, add the halved cherry tomatoes, feta cheese, minced garlic, and olive oil.
  3. Toss to combine and season with dried oregano, salt, and pepper to taste.
  4. Bake in the oven for about 25-30 minutes, until the tomatoes are blistered and the feta is golden.
  5. Meanwhile, cook the pasta according to package instructions.
  6. Drain the pasta and combine it with the baked feta and tomatoes, stirring to mix well.
  7. Serve warm, garnished with fresh herbs if desired.

Notes

Use full-fat feta for a creamier texture. Feel free to add more vegetables or swap in different types of pasta for variety.
