Delicious baked chicken burritos filled with tender shredded chicken, rice, beans, and cheese, perfect for any night of the week.
Ingredients

- 2 cups cooked shredded chicken
- 1 cup cooked rice
- 1 cup canned black beans, rinsed and drained
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 6 large flour tortillas
- 1 tablespoon olive oil
- Optional toppings: diced tomatoes, sliced green onions, guacamole, extra cheese
Instructions
- Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it.
- In a large bowl, combine the shredded chicken, rice, black beans, cheese, salsa, sour cream, chili powder, cumin, salt, and pepper. Mix until well blended.
- Lay a tortilla flat and scoop about 1/2 cup of the mixture into the center.
- Fold in the sides and roll it up like a burrito.
- Place each burrito seam-side down in the prepared baking dish.
- Brush the tops lightly with olive oil to help them crisp in the oven.
- Bake uncovered for 20-25 minutes or until golden brown and heated through.
- Garnish with your favorite toppings and serve warm.
Notes
Use rotisserie chicken to save time, and feel free to customize the filling with your favorite vegetables.
