Description

Delicious baked chicken burritos filled with tender shredded chicken, rice, beans, and cheese, perfect for any night of the week.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup cooked rice
  • 1 cup canned black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 6 large flour tortillas
  • 1 tablespoon olive oil
  • Optional toppings: diced tomatoes, sliced green onions, guacamole, extra cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it.
  2. In a large bowl, combine the shredded chicken, rice, black beans, cheese, salsa, sour cream, chili powder, cumin, salt, and pepper. Mix until well blended.
  3. Lay a tortilla flat and scoop about 1/2 cup of the mixture into the center.
  4. Fold in the sides and roll it up like a burrito.
  5. Place each burrito seam-side down in the prepared baking dish.
  6. Brush the tops lightly with olive oil to help them crisp in the oven.
  7. Bake uncovered for 20-25 minutes or until golden brown and heated through.
  8. Garnish with your favorite toppings and serve warm.

Notes

Use rotisserie chicken to save time, and feel free to customize the filling with your favorite vegetables.
