- 3–4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt & pepper, to taste
- 1 cup cherry tomatoes, halved
- 1 cup shredded or sliced mozzarella cheese
- Fresh basil leaves (for garnish)
- 2 tbsp balsamic glaze (for drizzling)
- Minced garlic (optional, for extra flavor)
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish.
- Rub the chicken with olive oil, Italian seasoning, garlic powder, salt, and pepper.
- Arrange the chicken in the dish and top with halved cherry tomatoes. Bake for 20–25 minutes or until the chicken is nearly cooked through.
- Top each chicken breast with mozzarella and bake for an additional 5–7 minutes until the cheese is melted and bubbly.
- Drizzle with balsamic glaze, garnish with fresh basil, and serve warm.
Notes
For extra flavor, consider adding minced garlic. Adjust spices to taste, and don’t overcook the chicken to keep it juicy.
