Description

Delicious and healthy baked avocado fries with a crispy coating that makes for a perfect snack or side dish.


Ingredients

  • 2 ripe avocados, firm but not mushy
  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs
  • 1 tablespoon water
  • 1 cup panko breadcrumbs (or gluten-free breadcrumbs)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the avocados in half, remove the pit, and slice each half into wedges.
  3. In one bowl, mix the flour, garlic powder, paprika, salt, and black pepper.
  4. In another bowl, whisk together the eggs and water.
  5. Place the panko breadcrumbs in a third bowl.
  6. Dredge each avocado wedge in the flour mixture, dip in the egg mixture, then coat with panko breadcrumbs.
  7. Arrange the coated avocado fries on the prepared baking sheet.
  8. Bake for 20-25 minutes or until golden brown and crispy.
  9. Serve immediately and enjoy!

Notes

For extra crispiness, spray a light coat of cooking spray on the fries before baking. Store leftovers in an airtight container in the refrigerator for up to 2-3 days.
