Delicious and healthy baked avocado fries with a crispy coating that makes for a perfect snack or side dish.
Ingredients

- 2 ripe avocados, firm but not mushy
- 1/2 cup all-purpose flour (or almond flour for gluten-free)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 eggs
- 1 tablespoon water
- 1 cup panko breadcrumbs (or gluten-free breadcrumbs)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut the avocados in half, remove the pit, and slice each half into wedges.
- In one bowl, mix the flour, garlic powder, paprika, salt, and black pepper.
- In another bowl, whisk together the eggs and water.
- Place the panko breadcrumbs in a third bowl.
- Dredge each avocado wedge in the flour mixture, dip in the egg mixture, then coat with panko breadcrumbs.
- Arrange the coated avocado fries on the prepared baking sheet.
- Bake for 20-25 minutes or until golden brown and crispy.
- Serve immediately and enjoy!
Notes
For extra crispiness, spray a light coat of cooking spray on the fries before baking. Store leftovers in an airtight container in the refrigerator for up to 2-3 days.
