- 1 1/2 cups crushed graham crackers (or digestive biscuits)
- 1/2 cup unsalted butter, melted
- 12 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy whipping cream, chilled
- 8 oz white chocolate, melted and cooled
- 1/3 cup Bailey’s Irish Cream
- 1 tsp vanilla extract
- White chocolate shavings (for garnish)
- Cocoa powder (for garnish)
- Whipped cream (optional, for garnish)
Instructions
- Prepare the crust: Combine crushed graham crackers and melted butter in a bowl, press into the bottom of an 8-inch springform pan. Refrigerate for 20-30 minutes.
- Make the filling: Beat cream cheese and powdered sugar in a large bowl until smooth. Gradually mix in melted white chocolate, then add Bailey’s Irish Cream and vanilla extract.
- In a separate bowl, whip heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
- Pour the filling over the chilled crust, smooth the top and refrigerate for at least 6 hours or overnight.
- Decorate and serve: Remove from the springform pan and garnish with white chocolate shavings, cocoa powder, or whipped cream. Serve chilled.
Notes
For a thicker crust, increase graham cracker amount to 2 cups. For a stronger Bailey’s flavor, adjust the amount to your liking.
