- 1 1⁄2 cups crushed chocolate cookies (such as Oreos)
- 6 tablespoons unsalted butter, melted
- 1 cup semisweet chocolate chips
- 1 1⁄4 cups heavy cream
- 1⁄2 cup Baileys Irish Cream liqueur
- 1 teaspoon vanilla extract
- 1⁄3 cup granulated sugar
- 1 envelope (7 grams) unflavored gelatin
- 1⁄4 cup cold water
- Whipped cream (for garnish, optional)
- Chocolate shavings or curls (for garnish, optional)
- A drizzle of Baileys (for garnish, optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix the crushed chocolate cookies with the melted butter until well combined.
- Press this mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8 minutes and let cool completely.
- In a small saucepan, combine the chocolate chips and 1⁄2 cup of heavy cream. Heat over low heat, stirring until smooth and melted. Set aside to cool slightly.
- In a medium bowl, whisk together the Baileys, vanilla extract, and sugar.
- Sprinkle the gelatin over 1⁄4 cup of cold water in a small bowl and let it sit for 5 minutes. Then, heat it gently in the microwave for 10 seconds or until dissolved. Stir this into the Baileys mixture.
- Beat the remaining heavy cream (3⁄4 cup) in a chilled bowl until stiff peaks form.
- Gently fold the melted chocolate mixture into the Baileys mixture, followed by the whipped cream, until everything is fully combined.
- Pour the filling into the prepared crust and smooth the top. Chill in the refrigerator for at least 4 hours or until set.
- Before serving, garnish with whipped cream, chocolate shavings, or a drizzle of Baileys if desired.
Notes
Use high-quality chocolate cookies for the best flavor. Make sure the heavy cream is very cold before whipping for better results. Don’t skip the chilling time for the pie to set properly.
