- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 1 cup heavy cream
- 1/2 cup Baileys Irish Cream
- 1 1/2 cups semi-sweet chocolate chips
- 1/3 cup powdered sugar
- 1 cup heavy cream (for topping)
- 2 tbsp Baileys Irish Cream (for topping)
- 2 tbsp powdered sugar (for topping)
- Chocolate shavings or cocoa powder for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the chocolate cookie crumbs and melted butter in a mixing bowl and press into a 9-inch pie dish.
- Bake for 10 minutes and set aside to cool.
- Heat the heavy cream in a saucepan over medium heat until it simmers, then remove from heat.
- Add Baileys Irish Cream and chocolate chips to the warm cream, let sit for 1-2 minutes, then stir until smooth.
- Beat powdered sugar into the chocolate mixture until fluffy, then pour into the cooled crust and refrigerate for at least 4 hours.
- For the topping, whip heavy cream, Baileys, and powdered sugar together until soft peaks form and spread over the pie.
- Garnish with chocolate shavings or a dusting of cocoa powder and serve chilled.
Notes
Store leftovers covered in the fridge for 3-4 days. Enhance flavor by using high-quality chocolate chips.
