Ingredients

  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup Baileys Irish Cream
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup boiling water
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons Baileys Irish Cream
  • 1 tablespoon cocoa powder
  • Pinch of salt
  • 1/2 cup heavy cream
  • 4 oz semisweet chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
  3. In a large bowl, whisk together the sugar, eggs, sour cream, Baileys, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until combined. Stir in the boiling water until the batter is smooth.
  5. Pour the batter into the prepared cake pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  6. For the frosting, beat the softened butter until creamy. Add the powdered sugar, Baileys, cocoa powder, and salt, and beat until smooth and fluffy.
  7. For the ganache, heat the heavy cream until it simmers, remove from heat, and stir in the chopped chocolate until melted and smooth.
  8. Once the cake is cooled, spread the frosting on top and drizzle with ganache.
  9. Slice and serve this decadent cake.

Notes

Serve with coffee or a glass of Baileys for an extra touch. Ensure ingredients are at room temperature for best results.
