- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1/2 cup Baileys Irish Cream
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons Baileys Irish Cream
- 1 tablespoon cocoa powder
- Pinch of salt
- 1/2 cup heavy cream
- 4 oz semisweet chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
- In a large bowl, whisk together the sugar, eggs, sour cream, Baileys, vegetable oil, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined. Stir in the boiling water until the batter is smooth.
- Pour the batter into the prepared cake pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy. Add the powdered sugar, Baileys, cocoa powder, and salt, and beat until smooth and fluffy.
- For the ganache, heat the heavy cream until it simmers, remove from heat, and stir in the chopped chocolate until melted and smooth.
- Once the cake is cooled, spread the frosting on top and drizzle with ganache.
- Slice and serve this decadent cake.
Notes
Serve with coffee or a glass of Baileys for an extra touch. Ensure ingredients are at room temperature for best results.
