- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder

- 1 cup buttermilk
- 1/2 cup boiling water
- 8 oz cream cheese, softened
- 1 cup heavy cream
- 1/2 cup granulated sugar (for cheesecake)
- 2 tbsp Baileys Irish Cream
- 2 tbsp cocoa powder
- 1 tsp vanilla extract (for cheesecake)
- 1/2 cup semi-sweet chocolate chips, melted
- 1 cup heavy cream (for whipped cream)
- 2 tbsp powdered sugar
- 1 tsp vanilla extract (for whipped cream)
- 1/2 cup Baileys Irish Cream (for soaking the cake)
- Chocolate shavings or cocoa powder for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cocoa powder.
- Add eggs, vegetable oil, vanilla extract, and buttermilk. Mix until smooth. Gradually add boiling water and mix until combined.
- Pour batter into prepared pan and bake for 30–35 minutes. Let cool, then cut into cubes.
- For cheesecake filling, beat softened cream cheese until smooth. In another bowl, beat heavy cream, sugar, Baileys, cocoa powder, and vanilla until stiff peaks form. Fold whipped cream into cream cheese, then fold in melted chocolate.
- For whipped cream topping, beat heavy cream, powdered sugar, and vanilla until soft peaks form.
- In a trifle dish or individual serving glasses, layer chocolate cake cubes, drizzle with Baileys, add cheesecake filling, and a layer of whipped cream. Repeat layers until filled, ending with whipped cream on top.
- Garnish with chocolate shavings or cocoa powder. Refrigerate for 4 hours or overnight before serving.
Notes
Use room temperature ingredients for the cheesecake filling for easier mixing. Make it non-alcoholic by replacing Baileys with chocolate syrup.
