- 250g chocolate biscuits
- 600g cream cheese
- 1 cup powdered sugar
- 1/2 cup Bailey’s Irish Cream
- 400ml heavy cream
- 1 tsp vanilla extract
- 200g dark chocolate, melted
- 1/4 cup chocolate shavings (for garnish)
Instructions
- Crush the chocolate biscuits into fine crumbs.
- In a large mixing bowl, combine the cream cheese and powdered sugar. Mix until smooth.
- Add Bailey’s Irish Cream and vanilla extract to the cream cheese mixture, mixing well until fully incorporated.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Layer half of the chocolate biscuit crumbs at the bottom of a trifle dish.
- Spoon half of the Bailey’s cheesecake mixture over the biscuit crumbs.
- Drizzle some melted dark chocolate on top.
- Repeat the layering process with the remaining biscuit crumbs and cheesecake mixture.
- Cover the trifle and refrigerate for at least 240 minutes to allow flavors to meld.
- Before serving, garnish with chocolate shavings and an extra drizzle of melted chocolate.
