  • 1/2 cup (60g) powdered sugar
  • 1/4 cup (60ml) Bailey’s Irish Cream
  • 1 1/2 cups (360ml) heavy whipping cream
  • 1 small chocolate cake, crumbled
  • 1/2 cup (90g) semi-sweet chocolate chips
  • 1/4 cup (60ml) heavy cream (for ganache)
  • Chocolate shavings or sprinkles for garnish
  • Optional: whipped cream or Bailey’s for drizzling

Instructions

  1. Prepare the Bailey’s Cheesecake Layer: In a large bowl, beat the cream cheese and powdered sugar until smooth and fluffy. Add Bailey’s Irish Cream and mix until combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Chill while you prepare the other components.
  2. Make the Chocolate Ganache: Heat the heavy cream until just simmering. Pour over the chocolate chips in a bowl. Let it sit for 2 minutes, then stir until smooth and glossy. Set aside to cool slightly.
  3. Assemble the Trifle: In a trifle bowl or individual dessert cups, start with a layer of crumbled chocolate cake. Add a generous layer of Bailey’s cheesecake filling. Drizzle the cheesecake layer with chocolate ganache. Repeat the layers until the trifle bowl is full, finishing with cheesecake on top.
  4. Garnish: Drizzle the top with more ganache. Sprinkle chocolate shavings or sprinkles for decoration. Optional: Add a dollop of whipped cream or a splash of Bailey’s on top.
  5. Serve chilled, either in a glass bowl or individual cups.

Notes

Ensure cream cheese is softened for easy mixing. Allow ganache to cool slightly before drizzling.
