- 250g chocolate biscuits
- 600g cream cheese
- 1 cup powdered sugar
- 1/2 cup Bailey’s Irish Cream
- 400ml heavy cream
- 1 tsp vanilla extract
- 200g dark chocolate, melted
- 1/4 cup chocolate shavings (for garnish)
Instructions
- Crush the chocolate biscuits into fine crumbs.
- In a large mixing bowl, combine the cream cheese and powdered sugar until smooth.
- Add the Bailey’s Irish Cream and vanilla extract, mixing well until fully incorporated.
- In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture until combined.
- Layer half of the chocolate biscuit crumbs at the bottom of a trifle dish.
- Spoon half of the Bailey’s cheesecake mixture over the crumbs, followed by a drizzle of melted dark chocolate.
- Repeat the layering process with the remaining biscuit crumbs and cheesecake mixture.
- Cover and refrigerate the trifle for at least 240 minutes, allowing the flavors to meld beautifully.
- Before serving, garnish with chocolate shavings and an additional drizzle of melted chocolate on top.
Notes
Use a food processor to crush the biscuits for an even texture. Room temperature cream cheese mixes easier. Add more Bailey’s for a stronger flavor. For variation, replace Bailey’s with milk for a non-alcoholic version.
