  • 1/4 cup (60ml) Bailey’s Irish Cream
  • 1 1/2 cups (360ml) heavy whipping cream
  • 1 small chocolate cake, crumbled
  • 1/2 cup (90g) semi-sweet chocolate chips
  • 1/4 cup (60ml) heavy cream
  • Chocolate shavings or sprinkles for garnish
  • Optional: whipped cream or Bailey’s for drizzling

Instructions

  1. Prepare the Bailey’s Cheesecake Layer: In a large bowl, beat the cream cheese and powdered sugar until smooth and fluffy. Add Bailey’s Irish Cream and mix until fully combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Chill in the fridge while you prepare the other components.
  2. Make the Chocolate Ganache: Heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chocolate chips in a bowl and let it sit for 2 minutes. Stir the mixture until smooth and glossy. Set aside to cool slightly.
  3. Assemble the Trifle: In a trifle bowl or individual dessert cups, start with a layer of crumbled chocolate cake. Add a generous layer of the Bailey’s cheesecake filling. Drizzle the cheesecake layer with chocolate ganache. Repeat the layers, ending with a layer of cheesecake on top.
  4. Garnish: Drizzle the top with extra chocolate ganache. Sprinkle with chocolate shavings or sprinkles for a decorative touch. Optional: Add a dollop of whipped cream or a splash of Bailey’s on top. Chill the trifle for at least 2 hours to allow the flavors to meld and the layers to set.
  5. To serve, scoop out portions into bowls or dessert cups and enjoy cool and chilled.

Notes

Make sure the cream cheese is softened to room temperature for easier mixing. Let the trifle sit for at least 2 hours to enhance flavor.
