Baileys Cheesecake Brownies with Espresso Ganache

Description

Delicious brownies combining rich chocolate and cream cheese with a hint of Irish cream liqueur, topped with smooth espresso ganache.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup Baileys Irish Cream
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 tablespoons Baileys Irish Cream
  • 1/2 cup heavy cream
  • 1 cup dark chocolate chips
  • 1 tablespoon espresso powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
  2. In a medium bowl, whisk together the melted butter, sugar, eggs, vanilla extract, and Baileys Irish Cream for the brownie layer.
  3. Add flour, cocoa powder, and salt to the mixture, stirring until smooth.
  4. Pour the brownie batter into the prepared pan and spread it evenly.
  5. In another bowl, beat the cream cheese and sugar until creamy. Add the egg and Baileys, mixing until smooth.
  6. Spoon the cheesecake mixture over the brownie layer and gently swirl with a knife to create a marbled effect.
  7. Bake for 30-35 minutes or until the cheesecake layer is set and the brownie edges begin to pull away from the pan.
  8. Let the brownies cool completely in the pan.
  9. While the brownies cool, heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and stir in the chocolate chips and espresso powder until smooth and glossy.
  10. Pour the ganache over the cooled brownies, spreading it evenly.
  11. Refrigerate for at least 2 hours to set.
  12. Slice into squares and serve.

Notes

Serve chilled, optionally with vanilla ice cream. Store in an airtight container in the refrigerator for up to one week.
