Description
Delicious brownies combining rich chocolate and cream cheese with a hint of Irish cream liqueur, topped with smooth espresso ganache.

- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup Baileys Irish Cream
- 1/2 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 2 tablespoons Baileys Irish Cream
- 1/2 cup heavy cream
- 1 cup dark chocolate chips
- 1 tablespoon espresso powder
Instructions
- Preheat your oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper.
- In a medium bowl, whisk together the melted butter, sugar, eggs, vanilla extract, and Baileys Irish Cream for the brownie layer.
- Add flour, cocoa powder, and salt to the mixture, stirring until smooth.
- Pour the brownie batter into the prepared pan and spread it evenly.
- In another bowl, beat the cream cheese and sugar until creamy. Add the egg and Baileys, mixing until smooth.
- Spoon the cheesecake mixture over the brownie layer and gently swirl with a knife to create a marbled effect.
- Bake for 30-35 minutes or until the cheesecake layer is set and the brownie edges begin to pull away from the pan.
- Let the brownies cool completely in the pan.
- While the brownies cool, heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and stir in the chocolate chips and espresso powder until smooth and glossy.
- Pour the ganache over the cooled brownies, spreading it evenly.
- Refrigerate for at least 2 hours to set.
- Slice into squares and serve.
Notes
Serve chilled, optionally with vanilla ice cream. Store in an airtight container in the refrigerator for up to one week.
