Description

A rich and moist cake combining chocolate and Baileys Irish Cream, perfect for any occasion.


Ingredients

  • 3/4 cup (75g) unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cups (350g) granulated sugar
  • 3/4 cup (180ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) Baileys Irish Cream
  • 1/2 cup (120ml) brewed coffee (cooled)
  • 1 cup (230g) unsalted butter, softened (for frosting)
  • 3 1/2 cups (440g) powdered sugar, sifted (for frosting)
  • 1/2 cup (120ml) Baileys Irish Cream (for frosting)
  • 1/4 cup (30g) unsweetened cocoa powder (optional for frosting)
  • Chocolate shavings or curls (for decoration)
  • Coffee beans (for decoration)
  • Drizzle of melted chocolate (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch (20cm) round cake pans with parchment paper.
  2. Sift together the flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. In another bowl, whisk the sugar, vegetable oil, eggs, and vanilla extract until smooth. Gradually mix in the Baileys Irish Cream and brewed coffee.
  4. Slowly combine the wet and dry ingredients, stirring until the batter is smooth. Avoid overmixing.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely in the pans before transferring them to a wire rack.
  6. For the frosting, beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar and cocoa powder (if using), alternating with the Baileys Irish Cream. Beat until smooth and fluffy.
  7. Assemble the cake by placing one cake layer on a serving plate. Spread a generous layer of frosting on top and add the second cake layer. Frost the top and sides of the cake evenly.
  8. Decorate with chocolate shavings or curls, coffee beans, or a drizzle of melted chocolate.
  9. Chill in the refrigerator for at least 1 hour before serving to let the flavors meld together.

Use high-quality Baileys Irish Cream for the best flavor. Store leftovers in an airtight container.
