- 3/4 cup (75g) unsweetened cocoa powder

- 1 3/4 cups (350g) granulated sugar

- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (240ml) Baileys Irish Cream
- 1/2 cup (120ml) brewed coffee (cooled)
- 1 cup (230g) unsalted butter, softened (for frosting)
- 3 1/2 cups (440g) powdered sugar, sifted (for frosting)
- 1/2 cup (120ml) Baileys Irish Cream (for frosting)
- 1/4 cup (30g) unsweetened cocoa powder (optional for frosting)
- Chocolate shavings or curls (for decoration)
- Coffee beans (for decoration)
- Drizzle of melted chocolate (for decoration)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line two 8-inch (20cm) round cake pans with parchment paper.
- Sift together the flour, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- In another bowl, whisk the sugar, vegetable oil, eggs, and vanilla extract until smooth. Gradually mix in the Baileys Irish Cream and brewed coffee.
- Slowly combine the wet and dry ingredients, stirring until the batter is smooth. Avoid overmixing.
- Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool completely in the pans before transferring them to a wire rack.
- For the frosting, beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar and cocoa powder (if using), alternating with the Baileys Irish Cream. Beat until smooth and fluffy.
- Assemble the cake by placing one cake layer on a serving plate. Spread a generous layer of frosting on top and add the second cake layer. Frost the top and sides of the cake evenly.
- Decorate with chocolate shavings or curls, coffee beans, or a drizzle of melted chocolate.
- Chill in the refrigerator for at least 1 hour before serving to let the flavors meld together.

Use high-quality Baileys Irish Cream for the best flavor. Store leftovers in an airtight container.
