Description

A rich dessert that combines a fudgy brownie base with a smooth Baileys-infused cheesecake filling, topped with luscious ganache and whipped cream.

  • 10 tbsp unsalted butter, melted
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • 6 tbsp natural unsweetened cocoa
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 24 oz cream cheese, room temperature
  • 1 cup sugar
  • 3 tbsp all-purpose flour
  • 3/4 cup sour cream, room temperature
  • 1/2 cup Baileys Irish Cream
  • 1/2 tsp vanilla extract
  • 3 large eggs
  • 8 oz semi-sweet chocolate chips
  • 5 tbsp Baileys Irish Cream
  • 5 tbsp heavy whipping cream
  • 1/2 cup heavy whipping cream, cold
  • 2 tbsp Baileys
  • 6 tbsp powdered sugar

Instructions

  1. Preheat your oven to 350°F (176°C). Line a 9-inch springform pan with parchment paper and grease the sides.
  2. In a medium bowl, mix melted butter, sugar, and vanilla extract. Add the eggs and mix well.
  3. In another bowl, combine flour, cocoa powder, baking powder, and salt. Stir the dry ingredients into the wet ingredients until combined.
  4. Pour the batter into the prepared pan and bake for 20-25 minutes. Let it cool.
  5. In a large bowl, beat cream cheese, sugar, and flour until smooth. Add sour cream and mix. Stir in Baileys and vanilla extract.
  6. Add the eggs one at a time, mixing slowly after each addition. Pour the cheesecake batter over the cooled brownie base.
  7. Wrap the pan in aluminum foil and place it in a larger pan filled halfway with warm water. Bake for 1 hour and 15 minutes at 300°F (148°C).
  8. Turn off the oven and let the cheesecake cool in the oven with the door closed for 30 minutes.
  9. Crack the door and cool for another 30 minutes. Refrigerate for 5-6 hours or overnight until firm.
  10. Heat Baileys and heavy cream in a microwave-safe bowl until simmering. Pour over the chocolate chips, let them sit for 1-2 minutes, then stir until smooth.
  11. Cool slightly and pour over the cheesecake.
  12. In a chilled bowl, beat heavy cream, Baileys, and powdered sugar until stiff peaks form.
  13. Pipe or spread whipped cream around the cheesecake. Drizzle ganache over the cheesecake and add dollops of whipped cream. Serve chilled.

Notes

For a richer flavor, consider adding more Baileys. Make sure the cream cheese is at room temperature to prevent lumps. Let the cheesecake cool completely before serving.
