A rich dessert that combines a fudgy brownie base with a smooth Baileys-infused cheesecake filling, topped with luscious ganache and whipped cream.

- 1 cup sugar

- 3/4 cup all-purpose flour
- 6 tbsp natural unsweetened cocoa

- 24 oz cream cheese, room temperature
- 1 cup sugar
- 3 tbsp all-purpose flour
- 3/4 cup sour cream, room temperature
- 1/2 cup Baileys Irish Cream
- 1/2 tsp vanilla extract
- 3 large eggs
- 8 oz semi-sweet chocolate chips
- 5 tbsp Baileys Irish Cream
- 5 tbsp heavy whipping cream
- 1/2 cup heavy whipping cream, cold
- 2 tbsp Baileys
- 6 tbsp powdered sugar
Instructions
- Preheat your oven to 350°F (176°C). Line a 9-inch springform pan with parchment paper and grease the sides.
- In a medium bowl, mix melted butter, sugar, and vanilla extract. Add the eggs and mix well.
- In another bowl, combine flour, cocoa powder, baking powder, and salt. Stir the dry ingredients into the wet ingredients until combined.
- Pour the batter into the prepared pan and bake for 20-25 minutes. Let it cool.
- In a large bowl, beat cream cheese, sugar, and flour until smooth. Add sour cream and mix. Stir in Baileys and vanilla extract.
- Add the eggs one at a time, mixing slowly after each addition. Pour the cheesecake batter over the cooled brownie base.
- Wrap the pan in aluminum foil and place it in a larger pan filled halfway with warm water. Bake for 1 hour and 15 minutes at 300°F (148°C).
- Turn off the oven and let the cheesecake cool in the oven with the door closed for 30 minutes.
- Crack the door and cool for another 30 minutes. Refrigerate for 5-6 hours or overnight until firm.
- Heat Baileys and heavy cream in a microwave-safe bowl until simmering. Pour over the chocolate chips, let them sit for 1-2 minutes, then stir until smooth.
- Cool slightly and pour over the cheesecake.
- In a chilled bowl, beat heavy cream, Baileys, and powdered sugar until stiff peaks form.
- Pipe or spread whipped cream around the cheesecake. Drizzle ganache over the cheesecake and add dollops of whipped cream. Serve chilled.
Notes
For a richer flavor, consider adding more Baileys. Make sure the cream cheese is at room temperature to prevent lumps. Let the cheesecake cool completely before serving.
