  • 1 9-inch deep-dish pie crust (pre-baked)
  • 6 strips bacon, cooked and crumbled
  • 1 cup sweet onion, thinly sliced
  • 2 cups fresh tomatoes, sliced
  • 1 cup shredded cheese (such as cheddar or mozzarella)
  • 1 cup heavy cream
  • 2 large eggs
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, add the crumbled bacon and cook until crispy. Remove the bacon and set aside, leaving some fat in the pan.
  3. Add the sliced onions to the skillet and caramelize them in the bacon fat for about 10-15 minutes, stirring occasionally, until they are golden brown.
  4. In a bowl, whisk together the heavy cream, eggs, salt, and pepper.
  5. Layer the caramelized onions, sliced tomatoes, and crumbled bacon in the pre-baked pie crust.
  6. Pour the cream mixture over the filling and sprinkle the shredded cheese on top.
  7. Bake in the preheated oven for 30-35 minutes or until the pie is set and the cheese is golden.
  8. Let the pie cool for a few minutes, then garnish with fresh herbs if desired. Serve warm.

Notes
