- 6 strips bacon, cooked and crumbled
- 1 cup sweet onion, thinly sliced
- 2 cups fresh tomatoes, sliced
- 1 cup shredded cheese (such as cheddar or mozzarella)
- 1 cup heavy cream
- 2 large eggs
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, add the crumbled bacon and cook until crispy. Remove the bacon and set aside, leaving some fat in the pan.
- Add the sliced onions to the skillet and caramelize them in the bacon fat for about 10-15 minutes, stirring occasionally, until they are golden brown.
- In a bowl, whisk together the heavy cream, eggs, salt, and pepper.
- Layer the caramelized onions, sliced tomatoes, and crumbled bacon in the pre-baked pie crust.
- Pour the cream mixture over the filling and sprinkle the shredded cheese on top.
- Bake in the preheated oven for 30-35 minutes or until the pie is set and the cheese is golden.
- Let the pie cool for a few minutes, then garnish with fresh herbs if desired. Serve warm.

For added flavor, try using different types of cheese. You can replace bacon with vegetables for a vegetarian option.
